Allowing locally processed foods to be sold
Commerical kitchens provide a location for artisans, chefs and farmers to safely and legally process food. A commercial kitchen may provide a community with: an increase in the variety of local food products, job creation, and the capability for farmers to add value to their raw products. But because of the many legal barriers (enforced by the county and the state) to certifying a kitchen as commercial, commercial kitchens are often few and far between.

In an effort to find out what commercial kitchens exist in Jefferson and Clallam counties, VISTA volunteer Leora Stein conducted a preliminary survey of commercial kitchen facilities. Below are the commercial kitchens most likely to meet the needs of artisans, chefs, and farmers for small-scale food processing in Jefferson and Clallam Counties.

Port Angeles Salvation Army, Port Angeles
The Port Angeles Salvation Army plans to offer a kitchen/job training program a newly constructed commercial kitchen.
Nash’s Organic Produce, Sequim
Nash’s is in the process of moving their farm store to a new location which will include a commercial kitchen, possibly for rent, within the next two years.
Brinnon Community Center, Brinnon
The Brinnon Community Center has a certified commercial kitchen for rent, and currently rents to some individuals who make jam in the summer time.
Future private food processing facility, Sequim
Colleen Lamb is currently building a commercial kitchen on her property in Sequim. Depending on county regulations she will rent her kitchen to the public and provide food processing classes. The kitchen will be tentatively completed by summer, 2010. She is very interested in helping other farmers add value to their raw products.
Cuisine Med, Port Townsend
Dacia Morrisonbuck, owner of Cuisine Med Catering, is open to renting her commercial kitchen to part-time, long-term renters.
Dundee Hill Center, Port Townsend
